- Coat the baking dish with olive oil. Place salmon fillet on the baking dish.
- Drizzle some lemon juice on the fillet.
- Combine butter and bread (crumbs), chopped shallot and parsley. Season with salt and pepper.
- Spread over the fillets. Add fish stock and wine.
