This two-tone decorative cake will be a real show-stopper at your table. Pick a patterned cake mould for an extra special finish.

Preparation
- Separate the egg yolks from the egg whites.
- Whisk together butter and sugar and add egg yolks.
- Beat the egg whites with some warm water until stiff peaks form.
- While mixing add the stiff beaten egg whites, flour, baking powder and salt. Add milk, rum and grated lemon zest.
- Divide the dough into two parts.
- Add cocoa powder and coffee and two tablespoons of milk to one half of the dough.
- Place the light-coloured part of the dough into a mould greased with butter and add the dark-coloured part on top.
