Small pastry made of leavened dough

This recipe requires some kneading, but it is well worth it. These fluffy and sweet homemade delights, filled with jam, are a great alternative to croissants.

Ingredients

For the starter:
white wheat flour
2 tbs
sugar
1 pinch
fresh yeast
20 g
salt
1 pinch
lukewarm water
100 ml

For the dough:
margarine
40 g
white wheat flour
200 g
sugar
40 g
salt
1 pinch
milk
70 ml

For the filling:
apricot jam
100 g
rum
1 tbs

Preparation

  1. Prepare the starter. Add crumbled yeast, flour, sugar and salt into 1 dl of lukewarm water to obtain a smooth mixture. Let rise for approximately 5 minutes.
  2. Prepare the dough. Add the starter to flour, along with margarine, milk, sugar and salt. Knead dough into a ball.
  3. Cover the dough with a cotton towel and let it rise for approximately 20-30 minutes. Roll out the dough to a thickness of 3 mm and cut out 8 triangle shapes.
  4. Prepare the filling. Mix the jam with rum. Place a teaspoon of jam on each triangle. Form crescent-shaped rolls and place them on a baking sheet with parchment paper. Cover with a cotton towel and let them rise for another 20-30 min.
  5. Before baking coat with egg yolk.
