This sweet soufflé with rice is a beautiful dessert which brings us back to childhood. Make sure to serve it straight from the oven. Great for your comfort food winter repertoire.

Ingredients


sugar
80 g
salt
1 tsp
milk
1 l
eggs
4 pcs
grated lemon zest
1 pcs
butter
100 g
short-grain rice
300 g

For the topping:
confectioner's sugar
1 tbs

Preparation

  1. Cook the rice in salted milk for approximately 20 min, until half done, and let it cool down.
  2. Separate the egg yolks from the whites. Beat the egg whites with some warm water until stiff peaks form.
  3. Whisk together the butter, sugar, egg yolks and grated lemon zest, and beat until foamy. Gently fold in the cooked rice.
  4. Mix the egg whites with rice and pour the mixture into a greased baking dish.
  5. After baking, allow to stand for 10 minutes. Sprinkle with confectioner's sugar.
