The perfect meal solution at the end of a busy day. This speedy veggie supper should be prepared in a big platter, as it's guaranteed to be everyone's favourite. Add it to your "My Good Food Collection" and enjoy.

Ingredients


parmesan cheese
3 tbs
tomatoes
8 pcs

For the filling:
salt
1 tsp
milk
3 tbs
egg yolks
3 pcs
peeled potatoes
0.4 kg

Preparation

  1. Slice the tops off the tomatoes and scoop out most of the pulp.
  2. Prepare the filling. Peel and cook the potatoes in salt water until half done. Let them cool down and mash them. Combine the mashed potatoes with egg yolks, butter, milk, and salt.
  3. Stuff the tomatoes with the filling.
  4. Place them into a greased baking dish and sprinkle Parmesan cheese on top.
