Leftover rice chocolate cake

Transform your leftover rice into this delicious chocolate cake. It will keep in the fridge for up to 3 days, but we’re sure, it will be long gone way before that time.

Ingredients

Cake

  • 200 g cooked leftover rice
  • 200 g sugar
  • 5 eggs
  • 40 g cocoa
  • 2 tsp vanilla essence
  • 160 g almond meal
  • 1 tsp baking powder

Topping

  • 200 g chocolate ganache
  • 50 g fresh strawberries

Method

Puree the cooked rice and sugar in a food processor. Transfer to a bowl, add 5 eggs and mix well. Add 40 g cocoa and 1 tsp baking powder, followed by 2 tsp vanilla essence and 160 g almond meal. Mix until combined and transfer to a cake pan. Bake for 40-50 minutes at 180 °C and top with whipped chocolate ganache and strawberries.
