Colorful pasta with creamy tofu sauce

Ingredients
- 150 g colorful pasta
- 300 g silken tofu
- 2 garlic cloves
- 1 tbsp finely chopped ginger
- 1 tsp sugar
- 1 1/2 tsp salt
- 1 tsp five spice powder
- 2 tbsp sesame oil
- 100 soy cooking cream
- 150 g king oyster mushrooms
- 2 tbsp chopped basil
- Fresh chilli to garnish
Method
Finely chop 1 tbsp ginger and 2 garlic cloves. Add 300 g silken tofu and combine with chopped garlic and ginger in a mixing bowl. Add 1 ½ tsp salt, 1 tsp sugar and 1 tsp five spice powder. Pour in 2 tbsp sesame oil and blend the sauce using an immersion blender. Blend until smooth and a add a few tablespoons of water if needed. Cook 150 g colorful pasta in salted boiling water – al dente. Roughly chop 150 g king oyster mushrooms and sautee them for about 5 minutes. Add cooked pasta to the pan and mix. Pour over with the tofu sauce and add 2 tbsp chopped basil. Garnish with fresh chillies and serve.
