Cardamom and raspberry buns
These raspberry buns are not only pretty, but so simple to make and delicious to taste. Whenever you want to feel that hygge vibe, this is the perfect recipe for you.
Ingredients
- 750 g flour
- 250 ml milk
- 14 g dry yeast
- 2 eggs
- 75 g brown sugar
- 75 g butter
- 1 tsp cardamom
For the filling
- 150 g frozen raspberries
- 100 g butter
- 75 g brown sugar
- 1 egg
- 1 tsp cardamom
Method
Mix dry yeast with warm milk, add 2 eggs, a teaspoon of cardamom and mix well. Add flour and wet ingredients, and mix using a mixer with a hook attachment. Add 75 g softened butter and 75 g sugar and keep mixing until the dough becomes smooth and elastic. Place the dough in an airtight container and let proof for 40 minutes at room temperature.
While the dough is proofing it’s time to prepare the spread: simply blend toghether 100 g softened butter with 75 g sugar and a teaspoon of cardamom. When the dough has rise, roll it out about a centimeter thick and cover with the spread. Add purreed or chopped raspberries, spread evenly and roll the dough. Cut the rolled dough into pieces (about 2 centimeters thick), cover with a teatowel and let proof for 20 minutes.
Brush the rolls with eggyolk, sprinkle over some sugar and bake at 200 °C for 10 minutes.
