Spicy oatmeal cookies

Are you ready for cozy fall days? These spicy oatmeal cookies are the perfect treat for dipping in some hot choco on a chilly day! A perfect combination of sweetness with a little kick to it.

Ingredients

  • 220 g room temperature butter
  • 170 g soft brown sugar
  • 60 g white sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 185 g flour
  • 1 tsp baking soda
  • ¾ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • 270 g rolled oats
  • 150 g cranberries

Method

Preheat the oven to 175 °C and line baking tray with baking paper. Cream 220 g of room temperature butter. Add 170 g brown sugar and 60 g white sugar. Mix until light and fluffy texture. Add 2 eggs and 1 tsp vanilla essence. Mix until fully incorporated. Add 1 tsp baking soda and ¾ tsp salt to 185 g flour. Add 1 tsp cinnamon, ¼ tsp nutmeg and ¼ tsp ginger. Mix well. Beat the flour mixture into the butter mixture. Stir in 270 g rolled oats and 150 g cranberries. Spoon 2 tbsp of batter and shape it into a ball. Place 8 cookie balls on one baking tray . Bake the cookies for 12 minutes with top/down heat in the middle rack.
