These healthy one pot noodles will be ready to eat in no more than 15 minutes.
- 200 g rice noodles
- 300 g peas (canned)
- 100 g shallots
- 250 g ricotta
- 40 g toasted hazelnuts (roughly chopped)
- 600 ml vegetable stock
Finely chop shallots, pour some olive oil to the pot, heat it up and sautee the shallots. Add cooked peas and vegetable stock to the pot. Puree everything using an immersion blender and bring to a boil. Add rice noodles to the pot and cook for 8 minutes. Finally, add ricotta, stir well and cook for 3 more minutes. Garnish with toasted hazelnuts and serve.
